1 lb. ground turkey
¼ c. green onions
2 Tbsp. orange juice
1 Tbsp. soy sauce
1 tsp. ginger
1 garlic clove, minced
1 c. Special Sauce (recipe follows)
4 hamburger buns

Combine first six ingredients in a large bowl. Shape turkey mixture into four patties. Grill patties for six minutes or until 165° F. Serve with the Special Sauce on hamburger bun. Serves four. Suggested wine/beer pairing: Hahn Pinot Noir or Goose Lake Honker Ale.



Special Sauce:
¾ cup mayonnaise*
1½ Tbsp. green onion
2 Tbsp. Dijon or honey mustard* (tested using Dijon, cutting back to 1 Tbsp.)
1 Tbsp. honey
1 tsp. orange juice
1 tsp. soy sauce (or try Nina Wong’s Black Stir Fry with its fabulous, rich flavor)*
½ tsp. ginger

Mix all ingredients together.
